brinjal curry (fried moju)














































INGREDIENTS: brinjals, redonins or bombay onions, chillies(different colours red and green) or bell pepper,curry leaves,rampa, curry powder, chilli powder,mustard powder, chopped garlic and ginger, vinegar, cloves,cardomoms,2 cups of water, sugar or aspartam(diet sugar),oil for frying, salt.
cut all vegetables in to pieces as the picture and fry them in oil, drain well and put on tissues to absorb excess oil.
now water , vinegar and all other ingredients exept sugar, put in a saucepan and boil together
and make the sauce as on video, finally mix the sugar and salt as your taste.
now put this sauce in the fried vegetable mix and mix them well in a chatty/corningwear/pyrex
let it cool and cork tightly if you keep that long time.
